    • Soak the Kulath dal in water overnight.
    • In the morning, wash and rub the dal under running water to remove the seed covering (chilka).
    • Grind the dal into a dry thick paste along with green chilies, garlic, and ginger.
  2. Cooking the Pancakes:
    • Heat a tawa or flat pan over moderate flame.
    • Add some mustard oil and make thick pancakes (like cutlets) from half of the dal paste.

    • In a separate pan, heat mustard oil and add cumin seeds and asafoetida.
    • Once the seeds start to splutter, add the remaining dal paste, turmeric powder, dry coriander powder, and salt.
    • Cover and cook for about 10 minutes on a slow fire.

    • Add the dal pancakes to the gravy and continue to simmer for another 10 minutes.
    • The gravy should have a pouring consistency. If too thick, add some more water and bring it to a boil.
